Cut the broccoli into florets and soak in water with rocksalt or tsp of baking powder.
1 medium size Broccoli cut into florets
Chop the garlic or thinly slice I lke to brown this garlic and use the oil and use this as a garnish at the end.
3 cloves garlic thinly slice ( optional )
slice the onion into strip or julienned but before doing anything try to put the onion inside the freezer for about 10 minutes before chopping this is to lessen teary eyes while slicing onions.
1 Whole onion White or Red
Finely chop the ginger this will add flavor to the dish originally in China they put ginger but in my video I skipped it .
1 tsp finely chopped ginger (optional)
Cut the beef meat into thin slices
320 g beef sirloin or flank steak thinly sliced
Marinate the beef with soy sauce and oyster sauce for 15 minutes.
2 tbsp soy sauce (silver swan), 1 tbsp oyster sauce (lee kum kee)
In a separate bowl mix the following ingridient's and make sure to dissolve the cornstarch before adding it to the pan.
4 tbsp soy sauce ( silver swan ), 1 tbsp cornstarch, 1 tbsp dark soy, ¾ cup water or stock
In a wok or deep pan heat up oil to medium heat and fry garlic by frequently stirring until golden brown then set aside, I skipped this part and still turns out good but if preppered the result is much much better you can check my other recipe on how to brown garlic.
Using the same oil ( garlic oil ) heat up to medium high heat and sear a portion of beef until until caramelized and continue the reamaining and do not over crowd or cook all at the same time as it will become watery and not be able to achieved the caramelized brown beef.

In the same pan or skillet heat oil to medium heat and add the onions stir until transluscent then add the ginger saute for 1 minute add the broccoli continue to stir until the broccoli turns dark green.

Dissolve the the cornstarch mixture once again before adding to the pan and mix until ssauce thicken.
4 tbsp soy sauce ( silver swan ), 1 tbsp cornstarch, 1 tbsp dark soy, ¾ cup water or stock, 1 tsp finely chopped ginger (optional)
Add the seared beef to the pan and stir quickly turn off the heat and adjust taste by adding salt and pepper according to your taste and serve with hot plain rice.
