Beef Ampalaya /Beef bitter gourd is bitter in taste that create a unique combination of flavor and often served with rice. Bitter gourd also known for health benefits. Picking the right ampalaya-should be solid green and no yellow and dark spot/mold rinse ampalaya with water it can either soak it to water with teaspoon of baking soda to properly clean, cut ampalya into lenght and scrape the membrain and the seed using a teaspoon, cut it in moon shape about 1 cm thickness or thinner then soak it in water with tsp of salt over night to lessen the bitterness this can also last up to 4 days.
Beef Ampalaya
Materials
- 250 g Beef (preferred sirloin or any tender cuts)
- 1 small onion
- 3 cloves gasrlic sliced thinly
- 3 tbsp oil or as needed
- 5 tbsp soy sauce (silver swan)
- 2 tbsp oyster sauce
- 1 tbsp flour
- 1 cup- water
- 1 medium size Ampalaya
- 1 tbsp salted black beans
- 1 tbsp dark soy
- Salt and pepper to taste
Instructions
- 1 medium size Ampalaya, wash and clean ampalaya and let it dry, Cut it in lenght and core out the filling using tsp, make a slit on both side of the filling for easy pith and seed removal.Slice into moon shape about cm thickness or thinner according to your preferred thickness.Soaked ampalaya in water with tbsp of salt overnight to decrease the bitterness or squeeze ampalaya with salt in a clean cloth and rinse or cook it as is if prefer bitter taste.
- 250 g Beef (preferred sirloin or any tender cuts). Slice the beef into thin and cut it against the grain.In a bowl marinate the beef with 2 tbsp soy sauce and 1 tbsp oyster sauce for atleast 20 minutes.
- Prepare all the ingridient's
- Sauce: Combine 3 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp dark soy and a cup of water and mix.
- Heat pan over medium high heat, add oil and sear the beef by batches and set aside.
- In the same pan or skilllet sautee garlic until fragrant release.
- Add onions and sautee until translucent.
- Add amapalaya and cook until tender or discoloration is visible or half cook if desired.
- Stir the soy sauce mixture before adding.Add the mixture to the pan and continuesly stir to avoid lumping, once the sauce thicken add the beef and mix, check consistency can add tbsp of water if sauce is too thick,
- Drain 1 tbsp of salted black beans and add to the pan, mix and simmer for another 30 seconds.
- Taste and season with salt and pepper and serve with rice.
