Filipino dish popularly known for it’s slightly tangy and savory taste, marinated chicken pcs and simmered with it’s marinade, easy to prepare and cooked in 30 minutes. A dish with balanced of sweet salty and sour, It’s versatile and can add or infuse other ingridient’s such as chili, toasted garlic, caramelized onion and coconut cream.

Chicken Adobo

Chicken Adobo is a Filipino all time favorite dish Known for it's simplicity, basic ingredients that found in every Asian kitchen, soy sauce, vinegar, garlic, pepper, bay leaves simmered to perfection. Can be substituted with pork or combination.

Ingredients
  

  • 1.5 kg Chicken
  • 1 Bulb Garlic
  • 2 pcs White onions
  • 1 tsp Black pepper
  • 4 pcs Dried bay leaves
  • 5 tbsp Soy sauce
  • ½ cup White vinegar
  • 2 tbsp Oyster sauce
  • 2 tbsp Dark soy
  • ½ tsp salt

Instructions
 

  • Clean the prepared part of chicken by rubbing it with rock salt and rinsed properly, pat dry with paper towel and cut into bite size.
    Taking off skin is highly recommended this is to avoid lot's of lard oil floating at the end of cooking.
  • In a big bowl combine all the said ingredient's
  • Marinate for 2 hrs or overnight and can be prepared 2 days ahead of time.
  • In a deep skillet heat up 3 tbsp of oil .
  • Separate and strain the marinade from the chicken.
  • Sear the pcs of chicken by batches, do not over crowd as it is become watery and not seared properly.
  • On the last batch of chicken seared add the marinade plus 1 cup of water
    mix and cover.
  • Let it simmer for 20 minutes or until the sauce reduced to prepared consistency
    taste and adjust seasoning and finish it with lot's of freshly cracked black pepper and serve with rice.
